Breakfast Salad with Soft-Boiled Eggs and Avocado

A salad for breakfast??  WHAAA??  It sounds a little crazy but there is no rule that breakfast has to be a “breakfast food”.   This Breakfast Salad with Soft-Boiled Eggs and Avocado is a perfectly balanced breakfast (or lunch or dinner)!  It’s quick enough to throw together for a weekday morning.  Also, a great way to get some extra veggies in.

Prep time: 5 minutes               Cook Time: 8 minutes            Total Time: 13 minutes  

 
Soft-Boiled Eggs – Instant Pot
I use my Instant Pot for hard- or soft-boiled eggs.  Why?  1. They peel like a dream.  No drama of having the white coming off with the shell.  2. They come out perfect every time. 

Directions:
  • Add 1 cup of water to your instant pot. Place in the trivet that came with your instant pot. Place eggs on the trivet.
  • Seal your instant pot and set to steam (high pressure) and use the following times for the type of eggs you want.
  •  2 minutes - for a very runny yolk
  •  3 minutes - for partially cooked yolk – this is perfect for me
  •  4 minutes - for almost cooked yolk but not yet completely solid
  •  5 minutes - for hard-boiled
  • Your instant pot should take about 5 minutes to reach the pressurized stage. As soon as the eggs are done cooking, immediately use the manual rapid release to depressurize. It's important that you do this for soft-boiled eggs.  If you don’t, they will cook too much, and you will have hard-boiled eggs. For hard-boiled eggs, you can either do the rapid release or allow them to sit in the pressure cooker for about 5 minutes for a natural release. Immediately remove eggs and place into a cold-water bath for 5 minutes.  You can do an ice-bath, but I haven’t found it necessary. 
  • When eggs are cool enough to touch, gently crack eggs starting from the bottom and remove shells.    

Salad
  • 2 big handfuls or more of organic mixed greens
  • ¼ - ½ avocado, cubed
  • 2 – 3 soft-boiled eggs
  • A drizzle of Balsamic vinegar and olive oil
  • To Taste - Herbamare, organic seasoned sea salt or regular sea salt
  • To Taste – ground black pepper
 
In a large serving bowl layer all your ingredients, starting with the greens. Then enjoy.
