A salad for breakfast?? WHAAA?? It sounds a little crazy but there is no rule that breakfast has to be a “breakfast food”. This Breakfast Salad with Soft-Boiled Eggs and Avocado is a perfectly balanced breakfast (or lunch or dinner)! It’s quick enough to throw together for a weekday morning.
